I am using relay 1 in a normal latching configuration (A button), but would like to have relay 2 set up to require you to press 2 buttons (in examlple pressing B and C together at the same time) to avoid un-intentional activation. Is this possible?

Yes it is possible, just press B&C together during programming.
Combination keys (such as B&C together) is fully supported, just you might need try several times before successful programming, because you need to make sure B&C are pressed at the same time.
